Pumpkin Spice Cut Out Cookies
I love my basic sugar cookie recipe for so many reasons. It tastes great, doesn’t need to be chilled, and is easy to adapt when you’re in the mood for something a little different…like pumpkin spice!
The addition of pumpkin flavoring and spices give my old classic a fall-friendly makeover.
I tried both the LorAnn’s pumpkin emulsion and Spices Ect’s pumpkin pie extract. I thought the Spices Etc extract was a bit “nutmeggier” than the emulsion, but both were wonderful.
Ingredients
- 1 c. {two sticks} of REAL unsalted BUTTER, softened
- 1 1/2 c. confectioner’s sugar
- 1 egg
- 2-3 tsp. LorAnn pumpkin emulsion
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg, ginger, and/or cloves
- 2 1/2-2 3/4 c. all-purpose flour
- 2 tsp. baking powder
- 3/4 tsp. salt
Instructions
- Cream together softened butter and confectioner’s sugar. Crack the egg into a separate bowl, and add the flavoring. Add that to the butter/sugar mixture and mix until the egg is thoroughly incorporated. In a separate bowl, sift together the flour, baking powder, spices, and salt, then add to the wet mixture a little bit at a time. The dough is ready when most of it sticks to the paddle. When touched, it has a little give, but does not stick to your fingers. Roll out on parchment to about 1/4 an inch thick, use flour for dusting as necessary. Cut and bake at 400 degrees for 7-8 minutes. This version makes 2-2 1/2 dozen, doubled, it makes 4-5 dozen.
The final product is a little darker in color than the original with the perfect hint of spice and pairs nicely with vanilla royal icing.

That cookie shape looks familiar . . . I tried Glory’s pumpkin spice cookie recipe and it’s really good. If I can find the pumpkin emulsion at the cake/cookie decorating store (my other home), I’ll give yours a try!

Hey, I have that cookies cutter! Hope you share how you decorate them – I’ve already got a couple of ideas rolling around in my head. And I love the idea of using the pumpkin emulsion with the standard sugar or brown sugar recipes. What an easy way to jazz up something you already love.
172The value of a course or of antheor thing may be really high but when people cannot afford the price I think it should be lessened in order for everyone to be able to take advantage of the deal. Many people cannot really afford to purchase at high prices things that may be really useful but are simply out of reach for them.

Oh, that sounds like an awesome combination! Planning on baking today (since its nice & cool), but i dont have either of those in my pantry:/ Wonder if I can convince myself to get dressed & go to the store for some 😉

I just made some cookies using Spices etc. pumpkin pie extract, and you’re right – it is a little “nutmeggy”, but the dough smells really good. I’m baking the cookies tonight. I’m going to find some of the LorAnn’s and give that a try, too. Your recipes are always so good!! Thanks, Callye!!

Your mini pumpkin pie cookies are adorable and I want to make them for our Awana Children’s ministry Thanksgiving dinner on Wednesday. I’d like to use the pumpkin flavored variation, but I can’t find the LorAnn Pumpkin Emulsion anywhere close to me. Is there a way that I can adjust the recipe to use something else? I could always use your original recipe, but these just look like you’d expect a pumpkin-y flavor. I love your cookies!! Thanks for all of the great recipes and ideas!

Callye, when you have a moment , would you please clarify the ingredients you list as follows: 1/4 tsp. ground nutmeg, ginger, and/or cloves – does this mean you put in only 1/4 tsp of one of them or 1/4 tsp of each of them? Also, I typically weigh my ingredients, so any chance you have this recipe with weights but if not, how do you measure the flour etc. = scoop into measuring cup and even with a knife (no patting down?). Thanks so much for any guidance you can offer.
