My Ramblings on Icing Color and Some Easter Cookies
In the last week or two it seems like I’ve made a ton of cookies…or maybe not. In any case, whether I make 2 dozen or ten, it always seems like I end up a lot of leftover icing.
Look familiar?
Two day old icing looks pretty icky, but it’s actually the beginning of the majority of my cookie creations. This Easter platter is the perfect example. The entire set was made completely out of of leftover icing.
Maybe it was it was all those years with a Nanny that washed Ziplock bags and Solo cups, but it just doesn’t seem right to throw away perfectly good icing. So, when mixing icing I almost never start with white. Most of the colors I use are a combination of leftovers made over to suit whatever I’m working on that day.
It amazes me that with just a little mixing leftover purple icing can become three entirely new shades.
In case that’s a little hard to wrap your head around, this might be a little easier to understand.
The top row is the original color. The second row it the original color combined with ivory. The third row is the original color combined with black. I love how simple black and ivory can turn five colors into fifteen!
Same thing goes for white. Add simple white icing to the brown shade above {created by combining purple and ivory}, and the change is dramatic.
And finally gray, which is one of my favorites. Who knew it could get so complicated? Leave it to me to take it beyond simple black and white. After a lot of trial and error I’ve found that my all-time favorite shade of gray is actually a combination of black and white with a touch of ivory and blue, which kind of reminds me of concrete.
All this, and I didn’t even venture into the other colors. Anyway, the point is, don’t throw away icing. Experiment, play, revisit that old kindergarten rule of “yellow and blue makes green”. Sometimes the results turn into a very pleasant surprise.

I love these!!!! I did the same thing today. Buzz’s spare parts (some greens, purples, blues, etc.) were used to make my light pastel pallet. I feel like you get a lot more control…
I see it like roll-over minutes… but it’s roll-over royal icing.
This is such a great Easter Set. The browns just make it work. Easter cookies need more brown. You are in inspiration!!!

You are such an inspiration and I honestly don’t know how you do it! If you ever get a chance I think you should write a post about what your average weekly schedule looks like. Like, when you bake, when you make frosting, where leftovers go, how often you have to clean tips, the whole 9 yards. For example, I’m curious if you make a huge set of dough and freeze it and just cup out a few cookies or if you freeze the cookies themselves and then pull out a few cookies at a time. Do you literally decorate cookies every day or do you have a back log of posts? I just so overwhelmed with the mess when making a simple batch of cookies that a set like this just blows my mind.
Lol! I’d probably give y’all a panic attack if I did! My husband calls me the girl who never sits!!!
Make him photograph you for “The Week of a Cookie Decorating Goddess!” People will love that. I’m not even kidding. Granted, at this point I think you could write about what type of dish soap you use and people will love it (because you’re just that amazing and popular) but I know that people would love to see how you operate. A window into the mind of a genius :).

Thanks for all the tips, especially the note about achieving that perfect gray! I took your advice a little while back and ordered the tulip red, egg yolk and ivory colors. You are right, they’re fabulous for color depth and mixing!
My burning questions now are probably ones that you’ve already answered – how long do you keep “old” icing and how do you store it? Thanks a bunch!
p.s. That Easter basket cookie is the sweetest dang thing. So many details! Such variety!
Unusually keep the colored icing for a week or two…after that it kind of gets double icky. I have enough bottles that I often leave it in them and stick them in the fridge, but I often put leftovers in little Pyrex dishes and store it in there. If I get a huge overload I mix it all up in my “black bin”.
I thought I knew, but now I KNOW why you are the Cookie Decorator above all Cookie Decorators! That grapevine basket is the most creative Easter cookie that has ever been made. Bravo!
Thanks for sharing Calleye. Brilliant! I use my leftover icing too. When I’m finished I squeeze all the colors iinto the same ziplock bag. I put it in the freezer and take it out when I need black icing. It needs a fraction of Americolor black to get a nice color. 🙂

This is so informative! If you did 100 more posts like this I would not mind….just keep mixing colors and showing us….mixing colors and showing us! I could stare at those dots all day long! I am very color challenged….and this helps quite a bit.
Any tips to getting all that icing out of the skinny top bottles? And when you do squish it out…..and it makes that “pharting” sound……I always have to yell “It’s not me”!! ….please tell me you do the same!
Lol, V, I just flip ’em upside down in a cup and let it all drain out. I may or may not even blame the bottles even if it was me!!!! 😉

Callye, what do you do when you need both piping and flood icing in a color? Do you whip the icing again at all? Or do you mix a new color twice, with piping & flood? I’d love to use up leftover icing, but I’m curious of the logistics of it. And, as always, I love your cookies!
I usually just add powdered sugar to thicken it bak up if I need to 🙂
I just made my first rudimentary batch of cookies for my daughter’s class. And I had a ton of frosting leftover. How do you store your leftovers and for how long? I ended up throwing it away and now you’re making me wish I hadn’t! lol
If its only sitting for a day or two I just leave it in the bottles. If its for linger I scoop it out into little glass pirex containers and stick it in the fridge.
How did you get all of the nice texture on the bunnies & chicks? I searched your blog for the answer but couldn’t find it. That might be a nice tutorial waiting to happen 😉 IF anyone else knows where to find this technique, please reply. Thanks!

i do this with icing all the time lol i used old colors to make new ones i really hate throwing away icing and i can never seem to judge how much i’ll need and always end up with left overs. i have a question for you i love wiltons rose color but would love it in bulk i can’t seem to find a color in the big bottles of ameri color that is similar do you have any suggestions ?

I am absolutely amazed by these cookies. I made my first batch of sugar cookies and tried decorating them tonight with royal icing. Although they didn’t turn out too bad, they look NOTHING like these! I know that practice makes better so I guess I’m going to have to dedicate some more time to cookies!!

Fantastic idea with the color changes! I will have to try that. Love your designs too! That basket is just incredible and I had to laugh when I saw your carrot. I did a segmented carrot this year, thinking I had come up with something unique and lo and behold, we were on the exact same wavelength. LOL I am breathing a little easier as at least my leaves are a touch different, but it is still pretty funny. These really are fabulous designs!
Speaking of leftover icing… I used some of my leftover meringue butter cream cupcake icing as fillers for chocolate eggs! I had peanut butter icing, orange icing and chocolate icing. I added more powdered sugar to make the meringue buttercream icing to make it stiff enough to roll into a ball that I then flattened somewhat, shaping it into sort of an egg shape. I used chocolate candy molds in egg shapes. I put sprinkles into the bottom of each mold, one color or kind for each type of filling… chocolate jimmies for the chocolate filling, pastels for for pink fondant, candy corn sprinkles for the orange, and chopped nuts for the peanut butter. Poured melted chocolate over the sprinkles, stuck in my icing/fondant filler, then more chocolate. They turned out pretty well!
I think getting colors “right” is the hardest part of cookie decorating for me. well, maybe it’s icing consistancy. Or maybe controlling the icing so it doesn’t look like a three year old decorated the cookie. Ok – so I have lots to cope with – but colors are right up there. and your colors are always so gorgeous. Thanks for sharing!!!!!!!!!!!!

Sometimes I make way too much of a color. He sits around in a ziplock bag for weeks, hoping to someday be re-purposed into another pretty color, meanwhile he turns into a blob of half stiff goopy-glop and half sticky watery syrup. Eventually, he sadly makes his way to the trash bin, because no amount of stirring will bring him back to life. Can these copious amount of left over icing be frozen then thawed once the right project comes along needing that color? Has anyone ever tried freezing royal icing for later use?
I have a friend who freezes and swears it works. I haven’t tried yet, but I will! If you do first, let me know!
