My Favorite Meringue Powder
It’s Friday night and being the wild woman that I am, I thought it would be nice to spend the evening talking about meringue powder.
Did I mention that I live in the boonies? This IS my fun.
So, let’s talk meringue powder.
In the last three years I have used a lot of meringue powder. And by a lot, I mean a LOT. For two of those years I was making between 20 and 30 dozen cookies a week, which required quite a bit of the stuff. After bit, I figured out that the one pound cans of Wilton weren’t going to cut it.
Now when I buy meringue powder, I buy in bulk.
Ever wonder what fifteen pounds of meringue powder looks like?
Now you know! When I order meringue powder this is what comes to my door. Fifteen pounds may sound like a lot, but I go through it pretty quickly.
Now check this out. This is what’s really going to blow your mind.
When I buy Wilton meringue powder at our local Walmart I pay $14.88 for a one pound can. Multiply that times fifteen, and the grand total is $223.20.
The very same amount costs $150.93 at Country Kitchen Sweet Art including shipping! {There is a 10% discount for orders over $100 dollars.}
Do the math and you’ll notice a substantial difference in price. Seventy-eight dollars and sixty-six cents to be exact.
I don’t know about you, but I can definitely think of something to do with seventy-eight dollars besides spend it on meringue powder!
To store it, I place the entire bag into a plastic storage bin and keep it in a cool dry place. Meringue powder does not require refrigeration.
My very favorite thing about this product is that it smells like sweet vanilla sugar, where the Wilton brand kind of stinks. And by stinks, I don’t mean in the “it sucks” way. I’m talking the “pinch your nose, rotten egg” kind of smell.
This does not mean that I am anti-Wilton, but given a choice I prefer the choice that doesn’t smell bad.
If Wilton meringue powder is all that you have access to, don’t panic. I made two years worth of beautiful cookies with the stuff and it was fine. Henry and Henry is just my personal preference. I’ve also used Ateco brand and been pleased. My best advice is use what works for you,unless of course yougo through large quantities of the stuff in which case, definitely buy the big bag!

A few more notes about meringue powder:
- the smaller bags of CK brand meringue powder ARE Henry and Henry brand. I called the store and asked.
- If you have a Michaels or Hobby Lobby nearby, be sure to print out and use their weekly coupons. That will save you a bundle. I don’t often get to take advantage of these deals because the nearest locations are a 160 mile round trip, but when I have to go to “town”, you better believe I stock up on supplies.

Ill have to try that. I tried Cks meringue powder out but my colors kept coming out to dark. When I switched back to Wilton I no longer had that problem.
I do agree that the brand I use seems to take color a lot better than the Wilton. I always have to errr on the side of too light.

KINDA like rotten eggs, huh? I threw away a can before, because it smelled, then kicked myself for wasting powdered gold when I realized they all smell that way!
I am going to try the Ateco brand… basically because I’m an Amazon Prime member so I do all my shopping on there. I found it on Amazon and couldn’t find the H&H brand… Can’t wait to give it a try. I don’t necessarily think the Wilton TASTES bad… but the smell is pretty off-putting when you’re mixing/icing to me. I never can seem to shake it.
I can’t tell you how much I love you for making me feel better about ordering 5 pounds of dried egg whites at a time!

I love Henry and Henry products! I worked in a pastry shop where we used different products from them and they were very high quality. Their European raspberry is awesome!

Frosted some cookies last night with all white, noticed that almost 20 hours later! The edges were beginning to turn a shade of light brown. Is this the product or me? Will buy bulk powder from your source from now on!!

My Friday night consisted of me hunched over my table decorating mehndi cookies just because. I’m supposed to be enjoying a cookie free week but surprisingly I found the mehndi relaxing. If you use that much meringue, I can’t imagine how many pounds of sugar you go through! Wow! Love your recipe, so my cookie monster doesn’t mind!
Meant to say my cookie monster doesn’t mind the pounds of sugar and meringue, though I’m just now graduating to the larger can. Was in denial at first, but I think I have the cookie bug!

Have you tried Americolor MP yet? I am really curious to know if it is any good. I usually use CK, but I’ve never seen it in bulk.
Price is better but they gave me hell twice and I will NEVER EVER use them again. I haven’t tried Americolor….
Good to know!! I haven’t ordered from them yet. The only other brand I’ve seen in bulk is Americolor. I found it online from a local cake supply shop, it’s $85 for 10lbs and they have a 10% discount for orders over $59. I’ll be ordering on Monday and I’ll let you know how I like it.
So far I’ve tried Wilton, CK and William-Sonoma. I love the CK best so far. And WS is impossible to find now.

FWIW, the Americolor brand meringue powder is really good, and that sounds like a great price.
I will never use Sugarcraft again, either. My bank did not think the site was secure and ended up cancelling all my connected accounts cards.
Also, I’ve never used Meringue Powder for my cookies. I’ve always used dehydrated pasteurized egg whites, my current supplier is Rose Acre Farms. Have you ever compared the two?
All I use is Americolor. I also make between 20-30 dozen cookies per week, and it is the best brand I have come across. It has a very good taste, Wilton tastes nasty! I buy mine through my local restaurant supply store, and I usually buy 30 lbs at a time to save money on shipping. You should definitely try it!
Okay… so I used to use William’s Sonoma’s….but can’t find it anymore…so I now have the ck brand in the bag….is that the same stuff you use…just in a smaller size???? Just curious if it is the same as the powder you get in the big tub??

Whoa, that’s a lot of meringue powder- but it totally makes sense given how many you make. I usually buy mine at Michael’s when they send me a 50% off coupon- then I just grab the largest size and I’m set for a few months. But CK would still be a better deal so thanks for sharing! 🙂

I use the Wilton because I don’t know any better – I buy it at Michael’s with a 50% off coupon. However, as soon as this can is gone I’m going to try the Ateco at Sur la Table because they are FINALLY bringing it back and Bridget swears by it. 🙂 Now… If I used meringue powder as much as you do, I’d be following in your footsteps with your source.

After they are mixed Irma I can’t tell any huge differences besides that it takes less color for the Henry and Henry brand. The Wilton does a good job I just prefer the other if I have a choice 🙂
MP DOES go fast! It’s amazing how quickly I go through a can. I always buy it in the big cans at Michael’s or Joann’s BUT I wait until I have a 50% off coupon! Paying $7-8 for the big can is so much easier on the pocketbook! If our Cottage Law passes here in Colorado, I might seriously have to consider bulk! You made me lol, because before I ordered the box I have now my hubs and I went to Lubbock {the closest place with two craft stores} and I had him in one line and me in another, lol, buying meringue powder because I knew it would be a long time before I got to town again.
Nice! It’s definitely worth finding space in the pantry–not to mention the savings!–when you go through meringue powder like you do. My moment of sheer joy related to meringue powder was simply in learning that it existed somewhere in the mid 90s. All those years of making royal icing by meticulously separating egg whites from yolks, over! Although, I have to say that the real egg-white version seems stronger than the meringue powder version. On occasion, when I need extra strength, I do it the old-fashioned way.
You are absolutely right! My old cake decorating friend {40 year veteran} said once upon a time she was making icing for a huge project and bought every can in town. Anyway, she had to go to egg whites. After that she said she’d never go back. In her opinion it’s stronger, not as vulnerable to the funky things that can happen to RI, and the cheapest method of all. It also freezes really well. She swears its the only way to go but do far I haven’t been motivated {or desperate} enough :-).
We use CK with great success. If you have a business license, you can get a wholesale account there and the price is great – but you do need a $125 minimum order. Sorry you had so much trouble with them, Calleye. They have been pretty good to work with on my end, just have a hard time coming up with $125 every time!
Oooooh, I don’t have trouble with CK. they arey #1 resource. It’s Sugarcrafter that I will never use again. They treated me badly once and it burned me forever!
I second CK using the wholesale account. It was super simple getting a federal tax Id to get the account with them. I figured out the discount buying the 1 lb is cheaper than a 15 lb box when you buy 15 1 lb individual bags at a time. And I dont need the bulk storage container. If you have trouble getting to 125 minimum network with other cookiers to see if they need supplies to combine orders.
Wow, that’s a LOT of meringue powder! Would you believe I still buy flour in the little 5 lb bags? Seeing your big bin of meringue powder, makes me think I should do that with flour and sugar. Cristin…I buy flour in bulk …25 lb bag for about $8.00 if i recall correctly, at Sam’s Club. When I first bought it, I was making a lot of bread. I thought no way will I ever use all this flour. Then I started making cookies, too. I go through a bag a month. I started buying confection sugar, granulated sugar, and brown sugar in bulk at Sam’s Club as well. For storage bins, I went to my local grocery store and asked the bakers to save their large frosting buckets for me. They were quite willing to oblige and they were free. Then I went to the Dollar Store and bought enough measuring cups to keep a whole set in each bucket. For the brown sugar, I throw in one of those moistened clay thingy’s and I never have dried out brown sugar. Bottom line, when I am ready to bake, I don’t want to have to stop and go to the store. I do enough of that when Callye comes out with an adorable cookie and I don’t have the cutter. But I’m fixing that too. I just went to Lowe’s and picked up some scraps of aluminum siding strips for $.49 and I am going to make my own cutters from now on. Hope this helps.

Ooh, good another brand to try. I need it in bulk, too, and definitely don’t care for the metallic smell Wilton carries. It does taste okay, but I prefer the CK brand.
One tip for your Wilton-only users, though. If you go to Michael’s or other craft store for your Wilton brand powder be sure to get the weekly coupon off the internet. It saves you a ton on those expensive little cans!

I’ve been using CK but will have to give this a try next time perhaps–definitely a money saver. I was in the kitchen for literally 12 hours yesterday trying to make some cookies for my nephews birthday party today (had your website pulled up of course for reference)–my computer was covered in flour and icing and my neck is sore from being bent over frosting all day. I concur, I hate that eggy smell of Wilton. I love the Williams Sonoma meringue powder, but we no longer carry at the store where I work. It says on the can made by CK and I have been buying that online, I think it is a whimpy 3# bag. Your package of powder is quite impressive, and you obviously have mastered it! Next time I buy I’ll try Henry and Henry. Wouldn’t it be fun to live near a place that sold this stuff? And cool cookie cutters, and disco dust, and all the colors….oh well, thank goodness for the Web.

you can get it cheaper than that at Bakers cash and carry in Salt lake city. i paid 32 for five pounds and i love it. plus i love the smell, it is more of a cherry odor. i love opening my pantry door. any way i don’t know what shipping is but i thought it was a great price.

I have two questions for you…………………
1. Do you notice a difference in how the icing behaves if you had cream of tartar? Does it “break down” more slowly or does it prevent “craters”? I don’t use it, so was wondering if you had.
2. Besides Wilton, do you notice any difference in brands on how the meringue “behaves”…..holds up better, tastes better? I use CK and just wondering if there was a significant difference. Wilton seems more “powdery” while CK seems more “fluffy” when it is dry. (softer). I have not tried Henry and Henry – would like to.
Thought this was very informative…….speaking of Sugarcraft…I have never ordered from them, but the reason is I find their site almost IMPOSSIBLE to navigate…I can never find anything when I “search”!
Oh….and I remember a post you made a while back and it was so true……when you buy really good flavoring for the icing it makes a big difference.

The ck brand is actually Henry and Henry repackaged. And after the discount the 15 lb bag is about 60 cents cheaper. If you need a ton this is easiest, but if you only need a little bit the smallest package is just as good of a deal.
I’m so glad that you said CK is actually Henry & Henry repackaged because I don’t need 15 lbs of meringue powder but I was about to consider it because you use it. Lol! I use CK. I may have said this before but you are like the Oprah of cookie decorating. If you say something is good it sells. You should do a post every year of Callye’s favorite things. 🙂

Have you ever considered about adidng a little bit more than just your articles? I mean, what you say is valuable and all. However think of if you added some great pictures or videos to give your posts more, pop ! Callye, have you tried Americolor’s Meringue powder? I just picked up 15lbs of it for $79 at that same cake store I sent you the disco dust sprinklers from: ABC Cake Decorating. I don’t know about shipping because I can pick it up locally, but it may be worth looking into. They finally have a website up and running. 🙂

Just wanna say how great this is I’ve been looking for it in bulk. I mostly use it for buttercream frosting I was wondering if it would change the color of the frosting with the Wilton brand the frosting is white the picture that you showed it looked a bit darker. Hey! I am loving this blog and have my cookies made and “drying out” for icing tomorrow. I, however, have no way to get Meringue powder, or anything. Can I use egg whites? How many would it take?
First, I’m a big fan. You are very talented and an inspiration. I’m fairly new to decorating cookies with RI, but I am officially obsessed. Since I am new, and didn’t know any better, until, well, tonight, I have always used Wilton brand MP. I have used your RI recipe, with Wilton MP, and my RI was wonderful. I didn’t know it could get better until I was surfing cookie blogs and saw posts that state that there are other brands of MP that taste even better than Wilton. So I go to my local cake decor store (not a big chain like JoAnn or Michaels), and purchase some of their MP. The thing is, it is “re-packaged”, for lack of a better term, with their name The Cakewalk. Just says, “The Cakewalk – Meringue Powder”. So no name brand. No biggie, it wasn’t Wilton so I bought it, not thinking to ask what kind it is. I made a batch tonight, using your wonderful recipe, as is, like I have been for 3 months now. The weirdest thing, its GRAINY or GRITTY. The only thing that’s different is the MP, so it stands to reason that is the cause, but how? Seems like Wilton is “bottom of the line” if you will, meaning anything else, even whatever brand they are selling is, would be at least one step up, but the Wilton NEVER came out grainy/gritty. Here is the kicker, IT’S DELICIOUS!! The flavor is 10x better tasting than Wilton, but I’m terrified of what its going to look like when I thin it to flood and it dries. I have rambled on long enough. Just wondering if you had any thoughts about this.

Hi there, I was wondering if you have ever had your royal icing turn out grainy. I used to use egg whites for my royal icing but I’d like to start using meringue powder instead. I tried your recipe but for some reason it turned out really grainy. The first time I tried it I hadn’t sifted the icing sugar so I tried again, this time sifting the sugar first, and got the same result. I was using Lantic icing sugar, which is the only brand they carry at our local store (I live in Canada). I’m thinking the problem may be the meringue powder as I bought it at bulk barn. Has this ever happened to you? Any advice you have would be greatly appreciated. Also, your cookies are absolutely gorgeous ?

I’m in canada and use Lantic sugar & bulk barn meringue – I haven’t found CK in Canada yet. Have you tried dissolving the meringue powder in your water before adding it to the sugar? That helped me a TON.
Not sure if you’ve seen this but their prices have really gone up; that box is now $198, plus shipping.
I bought a can of Wilton 4 ounce meringue powder ( for $6.95). I open and was surprise to find there was only 5 tablespoons of powder in the can. The can wasn’t even half filled. I wrote to Wilton to ask if that was normal because I had never bought it before. They never answered my email. I been looking for other brands to try in my baking.

Late to the game on this post but I just recently switched from Wilton to CK brand after hearing opinions of the 2 different powders. Has anyone else had trouble getting their frosting to set up hard enough to stack or package with the CK brand? Wilton made my frosting a crust and CK won’t get hard like that. I can press my finger into it even after 12-24 hours. It’s not sticky just not as hard. Any advice?
Can’t seem to find CK/Henry’s more than 1lb.

Tiffany, I can’t find Henry & Henry’s Kwik Fluff Meringue Powder in bulk either!
I got my last 15 lb box from Country Kitchen in July 2015, but it doesn’t look like they carry it any more. Does anyone know who might be carrying that size box? If I can’t find it, I will just use the CK Products one pound bags, but the larger box is just a little less expensive.

once the powdered meringue is made into frosting does it need to be refrigerated
I always have used the Americolor brand meringue powder but recently ran out and all the hobby stores in my area no longer carry Americolor. Amazon has stopped selling the larger tubs, so I decided to try Wilton but a very small can (in case I didn’t want to commit to it). I felt that the icing dried very nicely and smoother than with my Americolor. However, my icing tasted bitter! That just will not work for me. I have never had my icing taste bitter – not even a hint while using Americolor. Anyone else have this problem?

Can you store meringue powder in a clear jar? All the bags/containers I see are opaque leading me to think it might be light sensitive, but I’d like to be able to store in my mason jars if possible (I’m a little mason jar obsessed lol)
Is there a reason not to use pasteurized egg whites instead of merengue powder? It seems to not have that funny taste, and doesn’t dry so rock hard.

For the record, Wilton brand isn’t my favorite, BUT it has given consistent results for years, so, don’t be afraid to take that into consideration =)
