A Quest: Chocolate Roll-Out Cookies, Part 2
The moment I laid eyes Lila Loa’s chocolate cookie recipe, I knew I had to try it. With a name like, “The End-All for Chocolate Cookie Recipe”, it’s gotta be good, right?
Turns out, she was telling the truth. This cookie recipe is GOOD. In fact, if I had tried it first, there may not have even been a list…but as much as it pains me, I have committed to trying at least four chocolate cookie recipes, so I will keep my word, even if it kills me!
Did I mention these cookies are GOOD?
I love this recipe, and no matter what your baking style, I think you will also.
First of all, it’s very forgiving, and we all know how important those forgiving recipes are.
Also, you can use the dough immediately, or chill it if you choose.
And FINALLY, the best part of all, THESE. TASTE. GOOD.
Mine were a little darker than Georganne’s but that’s because I have this random cocoa powder mix bin happening {long story}, and I’ve promised Bern-Dogg I will not buy ANYMORE until I use up what I have.
So, here’s my observations:
Difficulty– These cookies are easy breezy to make. The instructions are clear and helpful. I love it that there is a no-chill method because I am not a dough chilling kind of gal.
Prep-time– I spent maybe 30 to 45 minutes on the cookies. I mixed them up in less than ten minutes using the no-chill instructions, rolled them, and baked them for 7 minutes. The instructions said 6 1/2, but *this is embarrassing* I don’t know how to make my oven do halves, so I did seven. Worked wonderfully.
Appearance- Beautiful cookies. B-E-A-U-T-I-F-U-L!
Texture- This is my favorite cookie texture. They are firm but chewy. Like a soft sugar cookie. Which makes sense, because except for the fact they’re chocolate that’s what these are.
Taste- I like LOVE these cookies…A LOT. This figures, because they are made with shortening, one of the few things I try NEVER to eat. However, in the case of these cookies, I strongly suggest making an exception. I’m not a shortening lover, but some things really are better with Crisco. If you are absolutely dead set against it, you can use butter. But try it, I really think the final product will convince you.
DECORATABILITY- These decorate beautifully…

So, here we are, two down, two to go. So far, I have two wonderful recipes. Meaghan’s chocolate cookies for those of you who like a little bite to go with your chewy-ness, and these, 100% soft all the way.
I’m almost positive Bridget’s homemade Oreo’s will be next. I haven’t stopped thinking about them since, well, um since I we polished off the last of these.

Agreed, these cookies are a beautiful base for icing. There is one huge issue that no one ever talks about. That raw, cold, chocolatey dough is so tasty!!!! I can pass up sugar cookie dough, but this dough is as delicious as the baked cookie. I felt like a kid pinching off tastes. I know, I know, raw eggs, and all. I do not care. It is better than chocolate chip cookie dough! LOL. And boy do colors pop on that dark chocolate….
These sound like a recipe I will definitely try. I love your decorating and the chocolate base makes for a wonderful contract to the royal icing.

I made these this past weekend and they were a hit. I used the williams sonoma messaged in a cookie cutter, and the letter imprints came out beautifully.

I made this recipe for the first time last week for a pink & brown baby shower & got rave reviews on the taste! Too bad I had problems with the icing drying completely. 🙁 This recipe is now my go-to for chocolate cookies!

Thank You! I did try these…. loved the color and how easy they are to roll out and decorate, but they are not crispy enough for our crowd. I usually overbake all my cookies as it is, b/c it is soo humid in miami and people here do not like the chewy ones… but even so. oh well, i am planning to try out all 4 so… we got 2 to go.

These are THE BEST! They taste great and hold their shape PERFECTLY! I substituted Cream Cheese for the shortening with stellar results … a total win-win for flavor AND texture! Thanks for doing all the legwork to find a GREAT chocolate cutout recipe for us :o)

I made these today and they are AWESOME!! Everything you said they would be. Very good, easy and forgiving dough and did I say very good! Yum.. will definitely make these again and again. They taste exactly like chocolate cookie press cookies.
Not sure if they are suitable for freezing for later decorating but I’m trying this too. I cut out both cats for now and candy canes for later.
Next up… the regular sugar cookie.
I just tried making these and it was epic fail. The dough would not stay together. It crumbled when I rolled it out and even after baking, they would not stay together. Do you have any suggestions?

Just made these – taste is awesome, but they spread badly! It was a simple shape ( hockey jersey ).
Any ideas why? (Followed the directions exactly – did chill overnight , so only used 3c flour as per instructions )

I tried this recipe and they were delicious!! I even used the shortnening. Thanks, this recipe is perfect for my Mother’s Day cookie gift bags!!
I halved the recipe, maybe this had something to do with my problems. I loved the FLAVOR! I loved how well they held theirshape! However, the dough was hard to work with, mine was very crumbly. I used tthe “immediate bake with extra flour recipe. My first roll out went well. My second roll out was slightly crumbly, even after kneading, then refrigerated. My third roll out was ik. Couldn’t get it to hold at all. I’m gonna keep rest of dough in fridge overnight & hope that works :(. Any ideas on what could have went wrong?
Like I said though, the flavor was wonderful. Chocolatey, soft with a slight crisp on the outside. It was a wonderful cut out cookie recip, held the shape perfectly! I guess iI would rate it 3.5 out of 5.was a bit of a let down, considering the name.
